Mediterráneo Gin Penne Pasta Sauce


• 1 pound penne pasta, cooked *al dente

• 1/2 onion, diced

• 2 cloves garlic, minced

• 1/4 cup olive oil

• 1/2 teaspoon red pepper flakes

• 1 28 ounce can diced tomatoes

• 1 cup Flying Dutchman Mediterráneo Gin

• 1 tablespoon sugar

• 1/2 cup cream

• 1/2 cup Parmesan cheese, grated

• 1/4 cup fresh basil, minced

• Salt and pepper

Add olive oil to a medium pot with diced onions, garlic, and red pepper flakes. Cook over medium heat until the onions and garlic start to soften and smell fragrant. Then add in tomatoes and sugar. Continue to cook the mixture for a few minutes before blending it up with a stick blender. Add the Mediterráneo Gin to the mixture, bring sauce to a simmer for 15-20 minutes, stirring regularly. Stir in some cream. Add cheese, basil, salt, and pepper to taste. Serve over penne pasta.
